Okay, so I’m a grad student and some days I have literally NO time for food prep (which is why I try to prep the best I can on the weekends!) When I forget to do that (or decide that a margarita is more important…) my favorite quick meal usually consists of these mini pesto pizzas.
I thought some of you might find them a great way to make a quick and healthy lunch. If you are vegan, you can make your own pesto without the cheese (that’s what I still do) All you have to do is take a LOT of basil and chop it all up together with some olive oil, pine nuts (add some extra pine nuts if you want your pesto to be “cheesier”), garlic, and salt (again, a little more salt if you want it to resemble more of a “cheese”). Slather some of that pesto on a small whole wheat Arnold sandwich thin and pop on a fresh tomato. Add some salt and pepper to taste, put it in the toaster oven or regular oven for a few minutes (or until you see the tomato skin getting pretty dry or crinkly) and then eat!
Another one of my favorite lunchtime meals is this amazing avocado sandwich. Lunch can always be a difficult meal, especially if you are working and have a limited time to eat. I like to make things that I know I can put down because I don’t get a real lunch break and am forced to eat when I can. I’m lucky to have an amazing natural food store near me on campus, so when I am short on time, I can always pick up a pre-made sandwich, but if I am at home, I make my own. Today I simply grabbed whatever veggies we had- spinach, cilantro, cucumbers- put them on some toasted Ezekiel bread with garden vegetable hummus, threw on an avocado and sprinkled on some cracked black pepper! Done! (turkey would be great here too!)
